Pan Pizza with Soppressata

This pizza, also called a “Grandma Pie”, is originally a Bon Appetit recipe that I changed ever so slightly. It takes a little time because it’s all from scratch, but it’s actually pretty simple, and the effort is worth it for that homemade taste. The dough and pizza sauce in the ingredients are also from BA recipes.

INGREDIENTS:

  • Homemade pizza dough
  • Pizza sauce
  • 12 oz. shredded mozzarella
  • 6 slices soppressata
  • Red pepper flakes
  • Sea salt
  • Parmesan, to serve (optional)

PREPARATION:

Preheat oven to 500 degrees. Let the oven stay at 500 while you prepare all of the other steps. A hot oven ensures a crispy crust.

Stretch out the dough in a large rimmed baking pan according to the instructions in the pizza dough recipe.

Once you have the dough nicely stretched out in the pan and it has rested for about 40 minutes, sprinkle the cheese evenly over it. In spoonfuls, dot pizza sauce on top of the cheese.

Top with the soppressata and sprinkle with a little sea salt and some red pepper flakes.

Bake for 30 minutes, or until the crust is brown and the cheese is bubbling.

Let cool a few minutes before slicing, then serve with shaved parmesan or your favorite pizza topping.
